
Lately, I've been appreciating slightly different things. The highlights of my days lately have been receiving packages in the mail and enjoying fresh baked goods. Recently I had the pleasure of putting the two together by using artisan made baking goods sourced from around the world to bake pumpkin pecan muffins with pantry staples. Pumpkin Pecan Muffin Recipe
This recipe is the same as the pumpkin muffin recipe I shared around the holidays with one minor variation - pecans! I have pecans in my pantry and haven't stopped adding them to everything. They're especially good in these but if you don't have them or don't like pecans (gasp) then just know they can totally be omitted.With everything that has been going on lately, we haven't been able to pop into the grocery store or keep as many fresh items on hand. Thankfully we've got a fairly well stocked pantry. All of the ingredients in this recipe are pantry goods. And they totally come to life when brought together.
These are also quite sweet and contain a bit of oil. Omit the brown sugar to reduce the level of sweetness. And the coconut oil can be completely omitted if you prefer to make them oil free, they'll just be slightly less moist (and they are very very moist).
Ingredients
1 3/4 cups all purpose flour1 cup sugar
1/2 cup brown sugar
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 teaspoons cinnamon
1 can pumpkin puree
1/2 cup melted coconut oil
1 teaspoon vanilla extract
3/4 cup crushed pecans
2 flax eggs (2 tablespoon ground flax + 6 tablespoons warm water)
Directions
1. Preheat oven to 375 degrees Fahrenheit.2. Prepare flax eggs by mixing the ground flax with warm water. Set aside.
3. Mix together flour, sugar, brown sugar, baking soda, salt, and cinnamon in a large bowl.
4. Mix the pumpkin, melted coconut oil, vanilla extract, and flax eggs into the dry ingredients.
5. Fold in the crushed pecans.
6. In a lined or greased muffin pan, divide the mixture into 12 muffin cups.
7. Bake for 20 minutes. Tops should spring back when done and a toothpick inserted into the middle should come out dry.
8. Let cool then serve.

The items are all beautiful but the best part is how practical and complimentary everything is. The small sugar canister is decently sized and it perfect for storing my brown sugar. The ceramic measuring cup measures 1 cup and was handy for scooping out sugar and flour. I love that the measuring spoons are marked in both metric and imperial units making it easier to follow recipes from around the world. The enamel mixing bowl is great for mixing batter but I can also see it being perfect for popcorn too. And the rolling pin, oh my gosh I have needed a rolling pin for my entire adult life and this one does not disappoint - it's so nice!
